How to Make French Macarons

I don't remember the moment I fell in love with French Macarons, it could have been when we strolled by Ginger Elizabeth in Midtown Sacramento and stopped in for a sampling of the most colorful and delicious macarons. Or it could be when my cousin's wife's sister made an assortment that were to die for and I ate an entire platter to myself and took a to-go bag home as well.  You can't really put me in the Betty Crocker or Julia Child category, but I do enjoy trying out some of the things I find on pinterest. I always thought that this French Macaron recipe most likely required a culinary degree of some sort and the most expensive kitchen gadgets money could buy. Negatory my good friends. Since I am unmarried as of yet, I do not have the legendary, "found on every wedding registry on the face of the planet", Kitchenaid Stand Mixer.
Que "heavenly sounds" music

So as you can imagine I was scared that if I didn't have this amazing contraption above, that my mission to make these very delicate heavenly cookies was doomed from the start.  Wrong, Wrong. (And I'm hearing Charlie Murphy in my head from the Chapelle Show...if you haven't seen this skit here is a little taste) Anyways, weird side note, back to baking. So, no heavenly Kitchenaid mixer, but I did have the Black and Decker Smart Spatula
I know, right .... looks like a total kitchen dinosaur doesn't it?? Let me just say, they don't make mixers like they used to because this little baby packed a punch. I'm not sure what cooking with a kithenaid is like but I think I can wait to find out cause this hand mixer did the trick. In all seriousness the mixing really is the most important part of this recipe so pay attention and do NOT over mix it. But you don't need a kitchenaid, this little had mixer will suffice. Don't let your mixing utensil hold you back; in the old days someone made these things with a whisk and spatula! If you need a good youtube video to follow, here is what I followed.  Recipe is in the link as well. I'm making some blue macarons, with raspberry buttercream for my sisters Baby Shower tomorrow. And here is what I did...enjoy!

Lesson learned....when she says "add more food coloring for a darker color" you should add more food coloring.
